 No Sugar Haystack Chocolates

1/4 cup Almond Flour
1/2 cup unsweetened shredded fancy coconut, + extra for aesthetics
1/8 teaspoon sea salt
1/2 cup favorite chunky nut butter (peanut or cashew or almond etc)
1 Tablespoon Coconut Oil
1/4 teaspoon  Green Stevia powder.
2 Tablespoons  Coconut Sap (or a bit more stevia)
1 teaspoon Vanilla Extract

Cut a portion of Parchment paper to fit a plate or tray. I sometimes sprinkle almond flour and shredded coconut on the paper so that the chocolates will have a crunchy textured bottom.

In a double boiler or a stainless steel bowl that can be set on a pot of boiling water, melt 8 pieces of unsweetened Baker's Chocolate. Sorry I don't know the weight measurement.

While that's melting, 
mix together
 almond flour, coconut, sea salt

Put the nut butter & coconut oil in a microwaveable dish & microwave it on high for about 40 seconds. you just need it to be warm enough that it easily combines. 
Once it is combined well, add stevia powder & coconut sap 

The chocolate is melted and runny!
Mix together the warmed nut butter & the melted chocolate.
Very quickly mix in the vanilla extract. It doesn't need to be well mixed, just a quick stir with a fork is fine. If you take the time to mix it in well, the chocolate will react and strangely 'dry up'. 
Add the almond flour mixture
Mix well & quickly
Drop from a teaspoon onto the parchment papered tray.
Sprinkle some shreds of coconut on top to make them look pretty.
Refrigerate for about an hour or until you can't wait any longer Smile

My first picture is to show the size compared to a teaspoon. Trust me, they are so rich you'd likely not want them any bigger than that

I should mention, All measurements are subject to taste Smile 
I tend to do it a bit different every time. 
This is actually the first time I've measured any of it, lol

Martha urwelcome  They would probably do well if using a polycarbonate chocolate mold but I don't have one yet

Oh I had to look up what that was and wow they look nice and one could just make their own chocolate bars that way! Very nifty indeed and worth thinking about.

Elaine, does it taste good? I'm always looking for good no sugar recipes. Some of them I try and I just don't like them. Sugar gives me migraines. I love chocolate and coconut together.

Dazzal, I think that if you've been off sugar for 6 months or longer, you would more appreciate these. There is quite a difference between the sweetness of stevia and the sweetness of sugar. The coconut sap though is very much like brown sugar but with a marvelous bonus in that it doesn't raise your blood sugar. at all! Personally, I've been zero sugar & near zero carbs for several years now and unsweetened coconut tastes very sweet to me.Until recently I was eating yogurt as a regular part of my diet and just the plain stuff seemed quite sweet to me. Stevia is easy to over-use. Most people, me included, go very slow with it no matter what a recipe says, adding just a little at a time & constantly tasting. Too much stevia is really gross tasting.
